Striped Bass:

Ceviche
1 Fillet of Bass with ALL dark meet removed and diced very finely.
1 Yellow Pepper
1 Red Pepper
1/2 Onion
2 Lemons
1 Lime
Capers to liking
Jalapenos diced finely to liking
Mix together and let sit in bowl for four hours before eating.



Bonito:

Tartare
1 8oz Filet or Steak of Bonito, skin removed and chopped into 1-inch cubes
2 Tablespoons Soy Sauce
1 Tablespoon Seasoned Rice Vinegar
1 Teaspoon Sesame Oil
1 Tablespoon Sesame Seeds, plus more for garnish
3 Green Onions, minced

Combine Soy Sauce, Rice Vinegar, Sesame Oil, and Sesame Seeds in a bowl large enough to fit fish
Add Bonito and marinate for at least 10 minutes, but no more than 1 hour
Add in Green Onions and stir so that mixture coats Bonito
Top with a sprinkling of Sesame Seeds and serve
